Ingredients

 ½ medium banana (ripe and peeled)
 ¼ medium organic apple
 1 ½ organic mixed berries (frozen or fresh)
 1 handful of organic spinach
 1 tbsp organic peanut butter (unsweetened)
 1 cup plant-based milk (unsweetened)
 1 tbsp chia seeds (or hemp seeds)
 ½ cup water
 1 handful of ice (optional)

Directions

Place all the rainbow smoothie ingredients in a blender, except the water and ice and blend until smooth.

Add the water and blend. Check the consistency and add more water as needed until you reach the desired consistency.

Add ice if you like a cool, slushy-style smoothie.

Chef's Notes

Substitutions
Use mixed berries or any berries you have on hand or prefer.

Instead of peanut butter, use almond butter or your favorite nut butter.

In place of spinach, use organic kale or other leafy green of choice.

Nut-free
Use tahini in place of nut butter.

Storage
Store rainbow smoothie leftovers in an airtight container in the refrigerator for up to 2 days.
