Summary

Tofu is higher in fat than some other protein sources, with six grams per half cup, but it’s low in saturated fat and high in healthy unsaturated fat. It’s also a great source of plant-based protein and phytonutrients. Replacing saturated fat with unsaturated fat, plant protein for animal protein and getting a nice dose of phytonutrients makes this one heck of a heart-healthy condiment.

Ingredients

 8 oz organic tofu (firm or extra firm, drained)
 2 tbsp lemon juice
 2 tsp organic apple cider vinegar
 ½ tsp mustard powder
 2 tsp pure maple syrup (or date paste, link in Chef’s Notes)
 ½ tsp salt (optional)
 1 tbsp Sriracha (or hot sauce of choice)
 1 tsp dijon mustard

Directions

Add all ingredients to a blender or food processor and blend until creamy.

Taste for extra spice or extra dijon.

Chef's Notes

Sugar-free
Use date paste in place of maple syrup.

Storage
Store leftovers in an airtight container in the refrigerator for up to 7 days.
