Sunflower Butter Banana Toast

Ingredients

 2 tbsp sunflower butter (unsweetened in a jar, or homemade) +2 Tbsp as needed
 2 tsp hemp seeds (hulled) +2 tsp as desired
 1 medium banana (ripe, cut into ½” sliced rounds)
 2 tbsp Yummy Chia Strawberry Spread (optional) link in directions
 2 slices organic whole grain bread

Directions

Toast the bread.

While the bread is toasting, gather your sunflower butter, hemp seeds, and banana (as well as the strawberry spread, if using).

Once the bread is done toasting, spread 1–2 tablespoons of sunflower butter on top of each piece.

If using the Yummy Strawberry Chia Spread, spread one tablespoon of chia spread on top of the sunflower butter. If not then skip to step 5.

Sprinkle 1–2 teaspoons of hemp seeds on top of the sunflower butter on each slice of bread.

Top each piece with banana slices.

Chef's Notes

Substitutions
Instead of sunflower butter use any nut or seed butter of choice.

Instead of the strawberry chia spread, use another fruit spread of choice or use fresh strawberries on top with the bananas.

Substitute bananas for just fresh berries.

Use ground flax or chia seeds in place of hemp seeds.

Flour-free
Use sweet potato “toast” in place of the bread.

Skip the toast all together and spread a bit of the sunflower butter on each slice (or bite!) of banana and then sprinkle the hemp seeds on top.

Prep Ahead
If planning to use the Yummy Strawberry Chia Spread, make ahead of time and store in an airtight container in the refrigerator for up to one week.

Storage
We don’t think you’ll have leftovers. It’s so yummy. But, if you do, store them in an airtight container in the refrigerator for up to 5 days.
