Tangy Blueberry dressing

Ingredients

 1 cup blueberries (fresh or frozen)
 ¼ cup water
 2 tbsp tahini
 2 tbsp balsamic vinegar
 2 tbsp date paste, link in directions (or sweetener of choice) +1 Tbsp as needed
 1 ½ tsp dijon mustard
 2 tbsp lime juice (preferably freshly squeezed)
 salt (optional) to taste
 ground black pepper (optional) to taste

Directions

Add all ingredients to a blender or food processor and blend until smooth.

Taste and adjust as needed (more water for consistency, date paste for sweetness or to offset acidity, or blueberries for more “blueberryness”).

Substitutions
In place of lime use lemon juice.

Prep Ahead
Make it early and store in an airtight jar or container in the refrigerator for 5–7 days.
