Chef's Notes

If you don’t have lemon balm
Use 1 ½ tablespoons of each of the other herbs (rosemary, sage, and mint), or simply use more mint in place of the lemon balm.

You can often find lemon balm at nurseries where you would find other herbs and garden plants. Try growing your own!

Lemon Balm and Thyroid
Lemon balm may be contraindicated with thyroid issues. Please check with your health care provider before using lemon balm if you have or are being treated for thyroid issues.

Benefits of each herb
Rosemary
Fun fact about rosemary — simply sniffing rosemary may elevate mood and increase cognitive function! Drinking rosemary tea has been shown to have the same benefits.

Sage
A relative of the mint family, antioxidant-rich sage has been shown to promote brain health and boost mood.

Mint
Some research has shown that mint can relieve frustration, anxiety, and fatigue.

Lemon Balm
Another relative of the mint family, lemon balm has been shown to reduce anxiety and depression by increasing GABA, a neurotransmitter that reduces stress.

Resteep the tea
Allow the herbs to dry on your countertop or, if you have a dehydrator, dehydrate them at 118 degrees F for 4–5 hours or until completely dry. Use them again for a second round of tea!

Storage
Store in an airtight container or mason jars in the refrigerator for 5–7 days.
