Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Make sure the tofu is drained well by either wrapping a paper towel or tea towel around it and placing a heavy object on it (with a plate underneath to absorb the water!) for one hour. Alternatively, you could gently squeeze the tofu with clean hands (very gently to avoid crumbling) to drain. Continue to squeeze until no more water is drained. This step is necessary for them to be crispy.
Cut the tofu into ½" cubes (if you like your croutons cut into perfect squares) or simply crumble into pieces with clean hands.
Add the nutritional yeast, onion powder, ground turmeric, salt and black pepper, if using, to a large bowl. Mix well.
Add the tofu to the spice mixture and toss until coated.
Lay the tofu out evenly on the baking sheet. Bake for 40 minutes, tossing halfway through.
Once done baking, turn the oven on to broil and broil the tofu for 2–3 minutes until extra crispy. See Chef’s Notes for Air Fryer instructions.
Chef's Notes
Substitutions
Substitute 8 ounces of tempeh in place of tofu by crumbling it with clean hands.
Substitute 1 ½ cups of smashed chickpeas in place of tofu (smash them with a fork or potato masher until crumbly).
Air Fryer
Air fry the tofu at 375 degrees for 25 minutes, tossing halfway in between.
Storage
Best if enjoyed immediately but if you have leftovers, store them in an airtight container in the refrigerator for up to 5 days. Reheat in the oven at 400 degrees F for 15 minutes or at 375 in the air fryer for 5–10 minutes.
