Summary

It’s entirely possible to get similar results using plants in place of traditional dairy cream. Due to its healthy fat and plant-based protein content, organic tofu works really well to make creamy dressings and sauces. Use it in this recipe as a base and add a little lemon juice, apple cider vinegar, and mustard powder to get a traditional mayo flavor. The addition of wasabi powder or paste gives it a little kick!

wasabi mayo

Ingredients

 8 oz organic tofu (firm or extra firm, cubed into 1” pieces)
 2 tbsp lemon juice (freshly squeezed)
 2 tsp organic apple cider vinegar
 ½ tsp mustard powder
 2 tsp pure maple syrup (or date paste, link in Chef’s Notes)
 ½ tsp salt (optional)
 1 tsp wasabi powder or paste (wasabi only on ingredient label, see Chef’s Notes)

Directions

Add all ingredients to a blender or food processor and blend until super creamy.

Taste and adjust with more wasabi, ¼ teaspoon at a time, until you reach your desired spiciness.

Transfer to an airtight container and refrigerate until ready to use

Chef's Notes

Substitutions
Use organic silken tofu in place of firm or extra firm tofu.

Use white wine vinegar in place of apple cider vinegar.

Substitute more wasabi powder in place of the mustard powder.

Whole food sweetener
Use date paste in place of maple syrup.

Where to find wasabi
Typically you’ll find wasabi in the ethnic foods section of your grocery store by the other ingredients used in Japanese cooking.

Storage
Store in an airtight container in the refrigerator for up to 5 days.
