Apple Strings with Caramel Cashew Cream

Kids (including your inner child, adults!), get ready for some fun! Apples take on a new life when they’re spiralized. And, when you can swirl them around in a date-base caramel sauce and cashew-based cream, the fun only increases. How can eating healthy be this much fun? Because plants are pretty magical, friends.

Ingredients

Caramel sauce
 1 cup dates (soaked in water for 2 hours)
 ¾ cup water (from the dates)
 1 tsp vanilla extract
 ¼ tsp cinnamon
 2 pinches salt (optional)
Cashew Cream
 1 cup cashews raw (soaked for 4–6 hours)
 ½ cup plant-based milk (plain, unsweetened)
 ¼ cup caramel sauce (from above)
 1 ½ tsp vanilla extract (preferably alcohol-free)
 1 pinch salt (optional)
 2 organic apples, medium (cored and spiralized)
 ½ cup walnuts (or pecans, chopped)

Directions

Make the caramel sauce: Add all ingredients to a blender or food processor and blend until a paste-like consistency.

Make the cashew cream: Drain and rinse the soaked cashews.

Place cashews, plant-based milk, ¼ cup of the caramel, vanilla, and salt (if using) into a blender or food processor.

Blend until smooth.

Divide the spiralized apples between two plates.

Top with caramel sauce.

Garnish each plate by drizzling a ring of vanilla cashew cream around the edge of the plate (about 1-inch in width, but the amount of cashew cream is really up to you!).

Sprinkle nuts around the plate.

Substitutions
Instead of apples use pears.

Nut-free
Use sunflower seeds in place of cashew seeds.

Use hemp seed, pumpkin seeds, or sunflower seeds in place of walnuts or pecans.
