Beet Balsamic Dressing

Ingredients

 1 cup beets (scrubbed, cut into 1” cubes)
 ¼ cup water
 1 tbsp tahini
 2 tbsp balsamic vinegar
 1 tbsp maple syrup (or date paste, link in Chef’s Notes)

Directions

Steam the beets: Fill ¼ of a large stockpot with water. Place the steamer basket in the stockpot and add the beets. Heat on medium-high heat until the water is boiling. Cover and steam for about 20 minutes or until the beets are tender (test with a fork). Carefully remove the beets from the steamer and transfer them to your blender.

Add ¼ cup water, tahini, balsamic vinegar, and maple syrup to the blender with the beets and blend until smooth.

Taste and adjust for additional ingredients of choice.
