Summary

Raise your hand if you love the versatility of beans. (Our hands are high!) White beans give this dressing some texture, as well as protein and fiber. The healthy fat in the avocado not only gives it a creamy mouthfeel but will also help the dressing stick to your greens a bit better. Swap a bell pepper in place of jalapeno if you want to skip the spice — it’s still delicious!

Ingredients

 ½ cup white beans (preferably homecooked, northern or cannellini)
 ½ cup water
 ¼ cup avocado
 ¼ tsp garlic powder
 ¼ tsp onion powder
 ¼ tsp mustard powder
 1 tbsp organic miso (mellow white or chickpea)
 1 large lime (juiced)
 2 tbsp jalapeño (chopped)
 ¼ tsp ground black pepper (optional)

Directions

Place all ingredients in a food processor or blender.

Blend until smooth.

Taste for additional flavors such as more lime, jalapeno, or miso (for salty and umami flavor).

Chef's Notes

Substitutions
Use red, yellow, or orange bell pepper in place of jalapeno if you prefer no spice.

Use lemon juice in place of lime.
