Ingredients
2 cups water
2 tbsp organic tamari (reduced sodium, or coconut aminos)
2 tbsp nutritional yeast
1 tsp Worcestershire sauce (vegan)
1 tsp onion powder
½ tsp garlic powder
1 dash ground black pepper (optional)
1 dash ground ginger
1 cup lentils (dry, brown or green)
4 medium-large organic potatoes (cooked)
2 cups organic lettuce (shredded)
2 organic tomatoes (diced)
Savory Sauce
½ cup vegan mayonnaise (link in notes)
2 tbsp organic ketchup
2 tsp pickle relish
½ tsp white vinegar
black pepper (optional)
Directions
1 Make our Easy Vegan Mayo.
2 In a saucepan, whisk together the water, nutritional yeast, Worcestershire sauce, onion powder, garlic powder, ginger, and black pepper.
3 Add the lentils, cover, and bring to a boil.
4 Reduce the heat to low and simmer until lentils are cooked, about 40 minutes.
5 Meanwhile, make the Savory Sauce: In a small bowl, whisk together mayo through black pepper, if using. Chill.
6 Slice the potatoes in half.
7 Spoon lentil mixture on top.
8 Top with lettuce, tomatoes, and Savory Sauce and serve.

Make it even healthier Use two fresh garlic cloves in place of garlic powder. Substitute ½ teaspoon of minced ginger in place of ground ginger. Use tomato paste in place of ketchup. Choose dark leafy greens for your lettuce. Use organic purple potatoes for more antioxidant power.
