Ingredients

 ½ cup Easy Vegan Mayo (link in Chef’s Notes)
 ½ cup kimchi (of your choice)

Directions

Make the Easy Vegan Mayo.

Add ½ cup of the Easy Vegan Mayo and ½ cup of kimchi to a blender or food processor.

Blend until mostly smooth. If you prefer extra silky smooth sauces, without texture, then a high-speed blender will work best and you’ll need to blend for a couple of minutes. If you like a little texture (our preference!) with your sauce (similar to a rémoulade), then either a high-speed blender or food processor will work. You’ll want to blend for about a minute, scrape down the edges, then blend again.

Serve kimchi mayo with bean burgers, on top of tacos, with a tofu banh mi sandwich, or over a grain bowl.

Substitutions
Use your favorite store-bought vegan mayo in place of the Easy Vegan Mayo.

Prepare the Easy Vegan Mayo ahead of time.

Store in an airtight container in the refrigerator for up to 4 days.
