Slow Cooker Apple Butter

Ingredients

 6 cups organic apples (roughly cut into cubes)
 10 dates (pitted)
 4 tbsp organic apple cider vinegar
 1 cup water
 1 cinnamon sticks
 2 pinches nutmeg
 1 pinch salt (optional)

Directions

Add all ingredients to a slow cooker and cook on high for 2 hours or low for 4 hours.

Once the apples are tender, remove the cinnamon sticks. Transfer the mixture to a blender, blending until smooth. Once cool, transfer to a refrigerator or freezer-safe container.

Add apple butter to morning toast, oatmeal, or plant-based yogurt, or spread over your favorite plant-based desserts.

Chef's Notes

Substitutions
Substitute apples with pears.

Substitute apple cider vinegar with lemon juice.

Instead of cinnamon sticks, use 1 teaspoon of ground cinnamon.

How to Make On the Stovetop
Heat the apples and dates in a large stovetop pot over medium-high heat for 3–5 minutes, stirring often. Add the apple cider vinegar, water, cinnamon sticks, nutmeg, and optional salt. Bring to a boil then lower to simmer until the apples are tender, about 10–15 minutes. Once tender, remove the cinnamon sticks. Transfer the mixture to a blender, blending until smooth. Once cool, transfer to a refrigerator or freezer-safe container.

Store in an airtight container in the refrigerator for 5–7 days or freeze for up to three months.
