Ingredients

 1 cup water
 ½ cup coconut milk (or other plant-based milk of choice)
 1 cup organic rolled oats
 1 tsp matcha powder
 1 tbsp date paste (+1 Tbsp as desired, link in directions — or sweetener of choice)
 1 tsp vanilla extract

Directions

In a small saucepan, whisk together the water and coconut milk.

Bring to a boil, then stir in the rolled oats.

Reduce heat to low, and cook until you have oatmeal, about 3 minutes.

Turn off the heat, cover, and let the oatmeal rest for 5 minutes.

Stir in the matcha powder, 1 tbsp coconut sugar or date paste, and vanilla extract.

Taste, adding more coconut sugar, if desired.

Divide equally among 2 bowls and serve.
